what can you do if you run out of pit polish? can you use #0000 steel wool?

I just buy plenty because Deltas polish is the bomb and their pit plus is the best pit filler!

First if I run out of an important very cheap consumable I would hopefully learn a very important lesson, I would also give myself a big talking too and be more business like in future and make sure it did not happen again.
I have tried different products in the past in tests, all have shortened the life of the pit.
Get some pit polish, explain to the customer and get back and polish it later.

I have used plastic polish ( same you would use on headlights) in a pinch. Works a treat!!
There is no need to fall on the Samurai sword if you run out.

local hobby shop will have jewelers rouge pretty close to the same stuff

What's up guys. Nice to see some of the same old dudes still here.
Not sure how you can run out of polish, and not see it coming. But if you have absolutely zero polish product, you can get a half decent result just by taking extra care scraping with a fresh blade and dry buffing with a towel. Depends on the specific resin though, and has to be 100% cured hard.
